Summer time means lots of things but good vine ripe tomatoes is one of my favorites. Nothing says summer like a good Blt right? I made some inside out BLT's and they were so awesome that I have to share the recipe with you. Your family will love them and they are a great quick meal. Just add a little salad and voila...a delicious lunch or dinner.
All you need are tomatoes, french bread, shredded Romaine lettuce, as much cooked bacon as you like, shredded sharp cheddar and a little mayo. Cut the tomatoes in half and scoop out the inside. Then cube the french bread and mix it with the other ingredients...........
After mixing the ingredients together, stuff the tomatoes and cover more cheese. Bake at 375 for 12-15 minutes until tomatoes get hot all they way through........
Serve and have a taste treat. It's much lower in calories because you can control the amount of bread that you use or of course, you can used any type of light or reduced fat bread..........Deliriously Delicious!!!!!............
This is my cousin Spanky asleep after our last family meal. There seems to be some pattern going with the men in my family having a huge meal and then falling asleep on the sofa. Wonder what that's all about???????.........
During Spring break I had a few of the kiddos from the bus ministry over for a tea party. We had a great time. These kids are awesome.......
And now to the "Having Babies" part. Miss Nan our daughter has just announced that she is carrying our first grandchild!! We are elated and can't wait to spoil it and send it home. I wonder what they will name it??? I wonder what in the world I'm going to wear for the baby shower and far more importantly to the hospital for the birth??? I certainly don't want Grand-kiddo's first memory of me to be looking like I just rolled out of the bed. I suppose I'll just have to purchase something new for the occasion...........drat, what a drag. Prince will be thrilled to hear that I must have a new birthing wardrobe..............okay, I feel old.

Awwweee, you a Grandmother!! Oh there are lot more questions than what you will wear! Things like what will they call me? What will they call Prince, where are the wipes and diapers, who does the child look like?, who does it act like? And on and on and on!! I can't wait for you. It's the funest part of life, I think! You are going to have so much FUN!!
ReplyDeleteSeriously, girl, those tomatoes??? Oh, I can just taste them now! I had some good Florida tomatoes last week from the Farmers Market. I bought 6 and they were gone in 2 days. We just can't keep them around here.
Hope things are good for you this week :)
Sure love ya and Congratulations!

That Inside Out BLT looks delicious, if The U didn't have dairy allergies he would certainly try it.
"...And the cat's in the cradle and the silver spoon....little boy blue and the man in the moon"....brings back memories. I still enjoy listening to Yusuf Islam (the artist formerly known as Cat Stevens).

ReplyDeleteI think it's awesome that you spend time with children from your ministry. I feel certain that we would be good friends if we lived close to each other.

ReplyDeleteI had my first grandchild two weeks after turning 40 - in celebration I bought a new pair of cleets for playing soccer. When Marissa arrived 6 years later I was in the delivery room... don't worry about fashion... I was wearing a blue paper cover for my cloths with blue paper booties, and a blue hat.... no one will remember what you are wearing cause only the new baby is seen. congradulations!!!
ReplyDeleteCongratulations! What a wonderful gift is a baby! And yes...I believe it is even written in birthing manuals that Grandmothers need new birthing wordrobes. So..if Prince gives you any trouble over this, tell him you are just doing what is expected of a grandparent!
ReplyDeleteYour recipe looks AMAZING! I am going to make it, using WW bread and Canadian back bacon (less fat).
Congrats on the first grandbaby! That is SO exciting.
